Lamb Burgers

I love this very quick and easy recipe.  Blitz up one red onion, mix in 400g minced lamb, with plenty salt and pepper.

I use a little burger maker - this allows me to stuff feta cheese in, equally use your finger.  Job Done!

I serve this with an lovely avocado and celery salad.  For those that want to avoid the bun, have some quinoa.


Buckwheat Crepes:

My boys favourite breakfast.  This can have scrambled or fried egg for breakfast in the morning!

250g Buckwheat flour
2 large eggs
about 300ml milk
1/2 teaspoon salt

Mix together, should be the consistency of single cream.  Put in fridge for 30 mins.

Use a large non stick frying pan pour in a ladle and spread round, cooking for only a couple of minutes on a medium heat then flip and start to fill.

This recipe can also be adapted to using ground almond and if you want to make it sweet, put in some maple syrup.

This recipe I have used on numerous occasions and it is tried and tested in our household! Devoured might be a better word. It's from Elana's Pantry. 

Kids especially love the chicken done in a gravy and all I add is some arrow root for thickening and some bouillon stock. Delicious - served with some sweet potato roasted in olive oil and some salt garlic and pepper. 

Rosemary Apple Chicken

  1. Rinse the chicken, pat dry with a paper towel and place in a 9 x 13 inch baking dish
  2. Drizzle with oil and vinegar, then sprinkle with salt
  3. Arrange the apples around the chicken in the baking dish
  4. Place the sprigs of rosemary under the chicken
  5. Bake at 350° for 90 minutes, until browned on the outside
  6. Serve

This is one of my favourite gadgets in the kitchen for the kids.  You can spiral fruit and veg.  Tonight it was sweet potato.  This I ordered from the states as it was cheaper than the UK.  Great way to get kids to try different foods!!!!
